I bought tri-colored noodles because I think they are pretty and pasta salad is amazing! I got this recipe (along with many others) from my Aunt Sandy. I chose this one because I had all of the ingredients on hand in different ratios so I made some slight adjustments. This was gone in 24 hours – it was that good!
I promised you all an update on my weight loss. I’ve been doing really well and steadily losing weight. Recently I went on a little ice cream binge and ate everything in sight. Store bought ice cream and my own homemade ice cream paired with multiple trips to ice cream shops = slight weight gain. Just a little bit though! I am back on track and have lost that little bit of ice cream weight!
Before my ice cream bender I got up to a loss of 20 lbs total. I got myself into a new bracket of numbers and was ecstatic about it. I’m back down again and have stopped the ‘bowl of ice cream every night’ stuff, a hard habit to break! My night eating came back for a bit but I am pretty sure I stopped that dead in its tracks. Moderation is working pretty well for me. I haven’t cut out anything and I haven’t told myself ’no, you can’t eat that because you are on a diet.’ I feel like that is when I mess up. As soon as the word diet gets thrown around I feel very restricted and I start to crave all of the things I shouldn’t eat. I feel like not calling my weight loss a ’diet’ has stopped my mind games. Drinking mass amounts of water and being a bit more active has helped, too. Here’s to another 20 lb loss in my future!
Pesto Pasta Salad
1/2 cup Fresh Basil Leaves
1/4 Cup grated Parmesan Cheese
3 Tbsp Olive Oil
3 Tbsp Vegetable Oil
2 Tbsp Chopped Walnuts
1 Lg Clove of Garlic, crushed
1/2 Tsp Salt
1/8 Tsp Pepper
2 cups Tri-colored pasta,
cooked, drained, and cooled
1/2 cup Green Olives
1 Cup Chopped, Pitted Ripe Olives
Place basil, cheese, oils, nuts, garlic, salt, and pepper in a food processor or blender.
Cover and blend well.
Place cooked pasta and olives in a large bowl. Add dressing and toss until well
coated. Serve within 2 hours or cover and chill. Serve at room temperature.
