Spumante Watermelon Cooler
We all have childhood memories of backyard barbeques and summer birthday celebrations. Parties where we would shove a giant slice of freshly cut watermelon into our mouths and get the juice and seeds all over our cheeks. Oh, that’s just me? Maybe some of you have adult memories where you’ve poured a bottle of vodka into a huge watermelon. Oh, just me again? Don’t be shy, I know you do.
Watermelon is the quintessential summer fruit. It embodies sunshine and swimming pools, beach towels and colorful umbrellas, flip flops and sand.
It’s perfect to bring with you on a picnic, to the beach or a summer party. It’s quick to cut and easy to store, just a bit messy. Eating watermelon by the slice is the easy option and oh so enticing. But if your fridge is bursting with cut up watermelon and you can’t eat it fast enough there are quite a few ways to use it in summer side dishes or drinks. I have watermelon stored in both of my refrigerators so I had to be creative with it. There is only so much you can eat at once! This Spumante watermelon cooler will surely please you and your guests.
This drink is a summery celebration in a glass. Make it while preparing to celebrate something special this summer. There are many summer holidays that call for a nice BBQ and tipsy fun. This bubbly drink will get the party started for sure. I don’t need a reason to celebrate, apparently, since I drank this last night for no reason whatsoever!
Remember the wine tasting I went to in June at Olde World Wine & Spirits? When I bought the Mango Wine for this Blueberry Slushy I also picked up a bottle of this Asti. I finally opened it and made this watermelon wonder and I’m so glad I did!

4 cups watermelon chunks (about 4 large slices)
2 cups Asti Spumante Wine
Frozen fruit: Grapes, berries or more watermelon for garnish
Cut watermelon away from the rind and remove all seeds. Process watermelon chunks in a food processor and add the wine. Gently mix with a straw or another utensil. Add ice and frozen fruit such as grapes, berries or more watermelon. Garnish with a small watermelon chunk. Serve and enjoy!
