Grilled Chicken Bacon Ranch Panini Sandwich
Another dreary Wednesday, the phone beeps and a familiar and voice passes through: “Do you want to order lunch?”
“Maybe. Probably. Okay” I reply, never needing much convincing.
This is a typical Wednesday around 11am. Recently, I’ve been ordering the best panini in the entire world. I present to you, the Chicken Bacon Ranch Panini Sandwich. It is not that uncommon of a pairing: chicken, bacon and ranch. Pretty run of the mill at places like Subway. I don’t know what makes this combination so great. Must be the bacon.
I decided to recreate this recipe and share it during Brunch Week. Day 2 might be my favorite day, I don’t know yet. You will have to come back and see what other brunch recipes I have up my sleeve! Prep Time: 30 min
Cook Time: 30 min
Total Time: 1 hour
1 Tbsp olive oil
4 slices Italian bread
2 Tbsp ranch dressing
4 slices of cheddar cheese
6 strips of bacon
2 small chicken breasts, grilled
Preheat oven to 350 degrees. Cook bacon strips in oven for 15-20 minutes. Grill (or bake) chicken breasts. When cool, slice into thin pieces.
Lightly spread olive oil on the outside of the bread.
On other side of the bread, spread the ranch dressing. On one side, place cheese slices over ranch spread. Add bacon and grilled chicken slices. Close with the other slice of the bread and cut in half. Add halves to a panini press or pan. Press or flip, cook for 3-5 minutes on each side.
