“Crack an egg on it!” is a saying that I have heard a lot.  I thought that cracking an egg on top of dough, sauce and cheese sounded appropriate for Brunch Week, and thus, Breakfast Pizza was on my mind all week.  At the last minute I decided to use English Muffins that were taking up way too much room in my freezer to make these mini breakfast pizzas.

These were really messy to eat. I think that if I were going to make these again (which I most certainly will) that I would use scrambled eggs in the future and melt the cheese on top with spinach and bacon or breakfast sausage. Either way, these mini pizzas were still pretty delicious. The egg running down my hands as I shoved these into my mouth wasn’t very attractive, I’m sure. Scrambling the eggs first would be daintier and appropriate for a group brunch.

Mini Breakfast Pizzas

These can be messy, use scrambled eggs instead or eat with a knife and fork!

Yield: 6

Prep Time: 20 min

Cook Time: 10 min

Total Time: 30 min

Ingredients:

3 english muffins
3/4 cup pizza sauce
1 cup mozzarella cheese
1 Tbsp olive oil
6 eggs
1 tsp parsley

Directions:

Preheat oven to 350 degrees. Slice open English Muffins, top with pizza sauce and sprinkle with cheese. Add olive oil to a skillet, crack eggs inside and cook on high until almost done. Add eggs to prepared english muffins and top with more cheese and parsley. Bake on baking sheet for 10 minutes or until eggs are cooked through.

    It looks like a pizza mcmuffin! I would probably make mine with an over-hard egg to reduce the mess, but a runny yolk is hard to resist.

    I love breakfast pizza! Who cares if it’s messy, the bread is there for the runny yolk! This totally reminds me of english muffins pizzas I had as a kid too.

    What an easy and fabulous idea. I am telling hubby about this one as he makes the breakfast in this house. I hope I get one really soon, I know I would love this!!
