“Would you like one, Miss?” said a tall man in a dapper suit. “Uhh. Sure.” I awkwardly replied. I wasn’t talking to anyone and was wandering the conference halls alone, just being my unsure self. I popped the bite-sized red square with a dab of white affixed on top without a seconds thought. Immediately following a small smile was the sound of satisfied taste buds – “Mmm.” I recognized the sweet flavors of watermelon and the tangy yet oh so creamy goat cheese dollop. I searched for the well-groomed young man with the serving plate but did not get a second bite.

Once I returned home I knew I wanted to have that exact flavor combination again. I decided to add blueberries to give this a festive flair for the fourth of July. This side dish would be perfect for a holiday picnic. Watermelon and blueberries scream and shout summer. I heard them loud and clear as they prompted me to recreate this dish. A good picnic dish is simple to put together and at most, five ingredients. Is this even really a recipe? It’s so simple it takes almost no effort, no time to put together and is healthy to boot – what’s better than that? Make sure to pack multiple spoons to dish this out with – you’ll need them.

Watermelon and Goat Cheese Fruit Salad

Yield: 2-4

Ingredients:

2 1/2 cups watermelon chunks
1 1/2 cups blueberries
1/4 cup crumbled goat cheese

Directions:

Cut watermelon into medium sized chunks. Add a small amount to a bowl and layer with blueberries and goat cheese.
