Today is the first day of Frozen Treat Week! It’s going to be a week filled with frozen treats perfect for cooling you off for the rest of the summer! Yesterday was my 27th birthday. Twenty-seven. I really don’t like the sound of that. Can’t we rewind seven years? I would do so many things differently. The saying “The youth is wasted on the young” makes a lot of sense to me now. Granted, 27 isn’t that old and it really isn’t a huge deal but it’s that much closer to the dreaded 3-0. Then it just gets worse from there, am I right? I’ll be one of those women telling everyone they are still 35 when they are in their 50′s.

For my birthday, Joe took me to Dorney Park and it was absolutely epic. There were almost no lines on the roller coasters, which are my favorite. We rode them all! After we ate lunch we went to the water park side and the lines were crazy long so we decided not to stay too long. The mystery as to where all the people were was solved.

For my first frozen treat I present to you: Pineapple Mint Popsicles! These babies are super easy and taste so sweet. The OXO pineapple fruit tool made cutting the pineapple and getting all of the fruit out unharmed extremely easy. I just love using OXO tools. They seriously make everything so much easier in the kitchen and around the house. Pineapple Mint Popsicles

Yield: 6-8

Prep Time: 05 min

Cook Time: 00 min

Total Time: 4 hour 05 min


2 cups pineapple chunks
1/4 cup fresh mint
1/4 cup water
2 Tbsp honey


Combine pineapple, water and honey together and process in a food processor or blender until smooth. Add fresh mint springs and process for a minute longer. Pour into Popsicle molds, add popsicle sticks and cover. Freeze until frozen, about 4 hours.

    This reminds me of one of my favorite drinks- a pineapple mojito! These sound so refreshing and delicious for a hot summer day!

    Happy belated birthday!! And I totally agree with you on the “youth being wasted on the young” thing…if I only I could go back and tell my twenty year old self not to be so stressed out!

    Pineapple is one of my favorite fruits and I know I’d just adore it in pop form!

    I use coconut water instead of just water. Also, I add 2 tablespoons of volka. This helps prevent ice crystals. Thanks for the recipe.
