Sunday Banana Nut Muffins

Breakfast on a hot Sunday morning with two close friends, what could be better? I woke up with a headache but knew my longest friend, Jenna and her boyfriend Josh would be coming over for breakfast. I made a simple and quick muffin recipe, brewed some unsweetened iced tea and cut up some grapefruit for us to enjoy on the deck. It felt very natural for me to host breakfast. I do believe the hostess in me was having a blast.

I set up a tiny table outside and surrounded it with our chairs. I poured water into a bowl for Ms. Daisy, their lovable rescue pit bull and rustled up some dog treats I knew I had in the pantry for doggie guests. I brought out the orange juice, glasses with ice cubes for the tea and water, a plateful of piping hot banana muffins, the cut up grapefruit, a bowl of sugar and sliced lemons.

Oh, it was a lovely morning.

My dear friends brought me pretty little vintage glasses for my photography, in a Christmas bag. I do love them so and was sad to see them go. Until next weekend, my loves!

I took Instagram pictures because I couldn’t find my camera. I thought I had just misplaced it briefly but when I went to take pictures of the leftover muffins I realized where it was. I left it in my friend’s car while doing a little photo shoot for my summer photo class. I felt like I was missing a limb because my camera is slowly becoming an extension of my arm and my eyes. I got my camera back within an hour and rewarded Joe with a muffin for his due diligence and camera rescuing.


Banana Nut Muffins

This banana nut muffin recipe was put together on a whim. I wish I had the idea to add a handful of blueberries to the mix instead of walnuts. Even chocolate chips would have been a nice change of muffin pace. Add nuts, blueberries or chocolate chips depending on your preference!

Yield: 6 large

Prep Time: 10 minutes

Cook Time: 30-35 minutes

Total Time: 45 minutes


1 1/2 cups all purpose flour
2/3 cup sugar
1 1/2 tsp baking powder
1/3 tsp salt
1 cup bananas, mashed (2 bananas)
1/2 cup butter, melted
1 egg
1/3 cup milk
1/4 cup walnuts, chopped


Preheat oven to 350° F. Whisk together the flour, sugar, baking powder and salt. Mix the mashed bananas and the melted butter into the dry ingredients. Add the add and milk and mix until combined. Scoop into prepared muffin tins and add walnuts if desired to the very top. Bake for 30-35 minutes or until the tops become golden brown and a toothpick comes out clean.

    I like the sound of the title, “Sunday Banana Muffins”. I had riped bananas and was going to make them into muffins, but decided to make them into banana bread. If I had saw these earlier, I would`ve made these instead!
