Pesto Pasta Salad

I bought tri-colored noodles because I think they are pretty and pasta salad is amazing! I got this recipe (along with many others) from my Aunt Sandy. I chose this one because I had all of the ingredients on hand in different ratios so I made some slight adjustments. This was gone in 24 hours – it was that good!

I promised you all an update on my weight loss. I’ve been doing really well and steadily losing weight. Recently I went on a little ice cream binge and ate everything in sight. Store bought ice cream and my own homemade ice cream paired with multiple trips to ice cream shops = slight weight gain. Just a little bit though! I am back on track and have lost that little bit of ice cream weight!

Before my ice cream bender I got up to a loss of 20 lbs total. I got myself into a new bracket of numbers and was ecstatic about it. I’m back down again and have stopped the ‘bowl  of  ice  cream every night’  stuff, a hard habit to break! My night eating came back for a bit but I am pretty sure I stopped that dead in its tracks. Moderation is working pretty well for me. I haven’t cut out anything and I haven’t told myself ’no, you can’t eat that because you are on a diet.’ I feel like that is when I mess up. As soon as the word diet gets thrown around I feel very restricted and I start to crave all of the things I shouldn’t eat. I feel like not calling my weight loss a ’diet’ has stopped my mind games. Drinking mass amounts of water and being a bit more active has helped, too. Here’s to another 20 lb loss in my future!


Pesto Pasta Salad


1/2 cup Fresh Basil Leaves
1/4 Cup grated Parmesan Cheese
3 Tbsp Olive Oil
3 Tbsp Vegetable Oil
2 Tbsp Chopped Walnuts
1 Lg Clove of Garlic, crushed
1/2 Tsp Salt
1/8 Tsp Pepper
2 cups Tri-colored pasta,
cooked, drained, and cooled
1/2 cup Green Olives
1 Cup Chopped, Pitted Ripe Olives


Place basil, cheese, oils, nuts, garlic, salt, and pepper in a food processor or blender.
Cover and blend well.

Place cooked pasta and olives in a large bowl. Add dressing and toss until well
coated. Serve within 2 hours or cover and chill. Serve at room temperature.

    Good to hear about your weight loss! Congrats!
    I think moderation is key to healthy eating. I feel like food restrictions can easily be broken.

    Anyways, I`ve always wanted to make pasta salad! I see them at albertsons or other grocery stores and I`m always tempted to buy some. Even though I`ve heard they don`t taste all that good. So i`m happy you`re sharing this!

      Thanks Lynna! I’d try this one then because it is different than the ones i’ve always had at grocery stores. The pesto flavor really is great!

    Pasta salads are a summer staple for me and everyone in the family. I love that this is pesto based…Really versatile. I remember my grandma used to tell me how tedious making pesto was before the food processors and blenders. Imagine how you need to wrestle with a mortar and pestle. Well, some people still use the same methods. I bet it tastes more flavorful that way, but i just dont have the time to grind manually. A special thanks to technology and evolving options. I can enjoy pesto very quickly and easily. This is a superb recipe.

    This looks so good, Sam! I love pesto and pasta salads…will have to try your recipe soon! Congrats on your weight loss. I really like how you’re doing it…everything in moderation and not denying yourself. Keep it up!!!
