Apple and Banana Baked Oatmeal

Breakfast lately has been dull: Scrambled eggs and toast or a bagel. I needed to mix it up lately so I made pancakes one morning and on Sunday I struggled with an idea of what to make. Joe hasn’t tried any type of oatmeal bake so I knew that’s what I needed to do. I made a healthy oatmeal breakfast bake with some apples and bananas that were going ripe way too fast. I peeled these apples but now that I am thinking about it I wish I had left the peels on for more nutrition! For the apples, I used a golden delicious and an empire. I had about 10 apples because I was planning on making apple cider that day too. I wish I had served this breakfast with the apple cider but alas, things don’t always work out perfectly.

I set up the crossword for Joe that morning. I even gave him a pen!

Later in the day I set out to take photos of this dish. I’m a short lady and I needed to get to higher ground for the best picture possible so I upped my tripod all the way and after doing that, there is no way I can see through my viewfinder. I haphazardly grabbed my rolling computer chair and proceeded to stand on it. I’m pretty sure I made Joe nervous so he held me steady, protectively putting his arms around my body while I looked though the back of my camera. These photos are now extra special to me. I’m a crazy lady. A crazy lady who is so blessed to have someone hold her steady, in life and while standing on unsafe chairs with wheels.

Apple and Banana Baked Oatmeal

This recipe calls for maple syrup and I suggest buying the more expensive local (or just organic) brands. The high fructose corn syrup in regular syrups makes me unhappy. Feel free to add other additions like raisins, flax seeds or chia seeds. While re-heating, I would suggest adding a bit of milk on top.

Ingredients:

2 cups oats
1 teaspoon baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
1/3 cup maple syrup
1/2 cup pecans
2 cups milk
1 tsp vanilla extract
1 egg
2 apples, peeled and sliced
2 banana, peeled and sliced

Directions:

Preheat oven to 375 degrees

Mix the oats, pecans, cinnamon, salt & baking powder together in a medium bowl.

Whisk the maple syrup, milk, egg, and vanilla extract together in another bowl.

Lightly butter a 8x13 baking dish or spray with cooking spray.

Line the bottom of the dish with half of the sliced apples and bananas.

Top the fruit with the oat mixture and the other half of the fruit.

Follow this with the wet mixture until everything is full coated.

Bake for 35-45 minutes.
