This Fruit  and Yogurt Granola Parfait recipe helps fuel my day and keeps me full until at least lunchtime!

Today is Patriots’ Day in Massachusetts, which also means that it is the Boston Marathon! Last years marathon ended in sorrow and I know that I’m not the only one filled with hope for today.

Last weekend, I was in Boston for a video game convention, PAX East. I attend every year and yes I am a nerd. I absolutely adore the city. I wish I could convince the boyfriend to move there so I can fulfill my dream of working at America’s Test Kitchen! While in town, staying downtown near Boylston Street, I saw on the news that there was a huge crowed down the street that showed up for the cover photo shoot of Sports Illustrated. Later that day, I saw tons of people by the finish line of the marathon that were showing the city how strong the people who live there actually are.

This crowd was massive and filled with runners, first responders, firefighters, Red Sox and Bruins fans galore.

Boston Strong!

While walking through the city you could feel the strength and resilience of everyone else around. Boston doesn’t mess around. You can also tell that the city has changed. For the first time since 2004, PAX East had bag checkers. That was kind of a slap in the face of realization that the world can be really scary.

Yogurt, easy fuel for the marathon that is your life.

The fact that Stonyfield is sponsoring the marathon is kismet because Stonyfield fuels the marathon of my daily life. I run around from one job to the next during the week and then I come home, make dinner, photograph it, test recipes and write about it all on this blog here. Not to mention the behind the scenes blog work and family and social responsibilities.  I’m usually exhausted and sometimes this easy parfait with lots of fruit, yogurt and crunchy granola is all I can muster for breakfast.

Fruit + Yogurt Granola Parfait

This recipe is great for a quick breakfast for two that is also very portable so you can be on the go! You can replace the fruit with whatever you desire or with seasonal fruits. Use prepared granola pre purchased or make your own! (It's so easy!)

Yield: 2

Prep Time: 05 min

Cook Time: 00 min

Total Time: 05 min

Ingredients:

1 cup vanilla yogurt
3/4 cup granola
2 bananas
2 kiwis

Directions:

Peel and slice the bananas and kiwis, set aside.

In a medium jar, put a small amount of vanilla yogurt on the bottom. Next add some bananas and kiwis and top with granola. Continue this rotation until the jar is full to the brim and you use up all of the yogurt, granola and fruit.

Serve with a spoon and enjoy!

If you are taking this to go, place granola in a plastic bag and add to the parfait when you are ready to eat. (This allows the granola to remain crunchy.)
